Researchers chose to study gelatin due to it being a rich source of proline & glycine – the connective tissue amino acids - which were relatively abundant in our ancestral diet, but relatively scarce in modern diets due to a lack of gelatin-rich foods on the market. Hopefully we will see more gelatin research in the future, as this study shows it is promising for joint health!
